Recipe for the Un-Cook – Diet Coke Cake

I heard about Diet Coke cupcakes and I had to try them.  Word on the street is that these cupcakes, when frosted with fat free Cool Whip are only 1 Weight Watcher point.  I don’t count points anymore but I was still intrigued.  Here is the recipe.

To Get:

1 box of chocolate cake mix (your choice)

1 can of Diet Coke or Pepsi

To Do:

Mix the diet soda and cake mix together

Dump in the pan (I made one big cake instead of cup cakes)

Follow the cooking instructions on the box

Frost with your choice of Frosting

It’s that easy people and it’s really really good.  My only observation is that the cake is hard to cut because it was really crumbly.  I frosted mine with a light layer of regular chocolate frosting so that upped the calorie count but still, I figured I was saving enough with the cake part to splurge.  Now this isn’t healthy or nutritionally beneficial by any means but its a quick and easy way to get your chocolate fix.


Mac n Squeese (Squash and Cheese) for the Un-Cook

Apologies for no measurements but this is how I made it. If you try it let me know how it worked out.

you need:

1 package frozen squash

1 package elbow mac (or any shape you prefer)

shredded cheese – I would estimate anywhere between 1 and 2 cups depending how cheesy you like it. Use any kind of shredded cheese you like.

feta cheese (or any soft cheese you like to give it a little kick)

Skim milk (or any milk substitute you prefer) – I would estimate I used around a cup of skim

salt n pepper

You do:

Pre-heat oven to 350

Prepare pasta according to package instructions

Defrost squash in the microwave. Squash needs to be hot for the next step so if its not hot after defrosting nuke it for a few more minutes

Add cheese and milk to hot squash and mix together in an oven safe casserole dish until smoothish (may need another 30 seconds in the microwave to get the cheese melty). Use salt and pepper to taste if you think you need it.

Add cooked pasta to the squeese and mix thoroughly.

Top with a dusting of feta (optional) and throw in the oven for 15 minutes or until squeese is bubbly.

And that’s it! Super easy, re-
