Ingredient of the Month: Kale

I tried kale for the first time ever a few weeks ago and I’m kind of obsessed.  I heard a lot about kale chips on some of the food blogs I read and then when Tina over at Trading Up Downtown posted the recipe for kale chips, it seemed so easy I had to try it. 

These baked kale chips were awesome.  I seasoned mine with EVOO, salt, pepper, a little bit of cayenne pepper and some garlic bread spice I found in my cabinet.  On the first bite I thought they were good but I would be more likely to have this as a veggie side dish to a dinner rather than something to snack on.  But then I hade a few more and I was hooked.  I can’t believe how crunchy the delicious they are!

After I was hooked on kale chips, I started adding kale to everything! In my oatmeal with some agave nectar (a little weird but I like it), in an omelet, in salads and blended up into a smoothie with some greek yogurt and frozen veggies.   It’s cheap, delicious and it would be a great addition or substitution to a recipe that calls for spinach.

Anyone else have any fun (and easy!) kale recipes?
