I am a Crockpotter

I was really excited when I opened my crockpot at my wedding.  I had a feeling that it was something I would use all the time.  In the winter I could load everything in to the crockpot and come home to a nice warm house with the smell of a great meal wafting through the air.

Fast forward one year and I have used it twice.  The first time I used it I made spaghetti and meatballs, but I didn’t bake the meatballs first or use breadcrumbs in them so they were like rubber balls.  So gross.  The second time was last night.  I decided to make a chicken dish that called for a whole chicken, Russian dressing, aprioct preserves and a package of dry onion soup mix (I’ll post the recipe in the uncook series).  I had a fresh 4 pounds chicken to use and when I was unwrapping it to clean it and take out whatever that bloody thing they put up bird’s butts I thought I was going to vom.

I’m not a huge meat eater, to me chicken always tastes dry, and I was told by someone that cooking the chicken on the bone keeps it moist, hence the whole chicken, but I was having a major guilt attack looking at the carcass of this dead bird.  I’m grossed out enough by ground hamburg that doesn’t look anything like the animal it came from, but this poor chicken looked like a chicken.  It kind of bummed me out.

Anyway… I managed to prep the chicken without hurling and got it situated in the crockpot and started cooking it. My husband was in and out of the house all day and said it smelled awesome.  By the time I came home the house was warm in toasty and the smell of a great meal was wafting through the air.  The chicken was so moist I actually enjoyed eating it! I’m an official crockpot fan.  It doesn’t make a huge mess and it was nice to have dinner ready for me when I walked in the door.

Does anyone have any easy crockpot recipes they want to share? I’m anxious to use it again and try to cook some healthy stuff.

My food intake for the last few days have been pretty good. Here is my breakdown for yesterday:

b-fast: 1/2 c oats, 1/2 c water, 1 hershey kiss, 1 Chai Tea Latte from my Tassimo (300 cals)

lunch: butter lettuce with feta and sun dried tomato dressing (200 cals)

snack: home made sugar cookie and some of the pita I meant to eat with my salad but forgot (160 cals)

dinner: crockpot chix, brown rice, mixed veggies (500 cals)

dessert: small piece of choco truffle bomb..soooo good (300 cals)

total: 1460

exercise: 2.5 mile walk at lunch
