Dinner Funk

Every once in a while I get ambitious and try new recipes for dinner but these past few weeks I have been in a funk.  Life has been a little  crazy and there hasn’t been much time or energy to try new things.  Plus in an effort to save up some dough for my upcoming vacation… I have been sticking to the necessities at the super market (which may translate into having a fridge that looks like a college kids).

I’m interested in trying some new recipes but haven’t really found any that made we want to take action.  And the ones that look good in the photos had an ingredient list that’s miles long so that immediately gets crossed off the list.

So if you have anything quick, simple and yummy in your dinner rotation let me know. I feel like once bootcamp is over I will have more time to do some experimenting.

Also….. if you haven’t figured it out that whole post about eating soup for lunch every day to lose weight was a load of b.s. since I haven’t had soup once this week.  I’m on my own for dinner tonight so I was thinking of making some for dinner, but I will most likely pair it with a grilled cheese on whole wheat. YUM!

Here is my food recap

b-fast: 1/2 c oats, 1/2 c skim, 1tbsp PB (300 cals)

lunch: left over chix stuffed with feta, spinach, artichokes and capers, rice pilaf (300 calories)

snack: SmartFood .. I know I’m weak (160 cals)

dinner: Taco salad with chili and a little bit of sour cream and guac (800 cals)

total: 1560

exercise: none 😦
